White Bean & Truffle Croquettes 

Mashed canned white beans, truffle oil, and breadcrumbs formed into crisp croquettes

  • 1 can (15 oz) white beans, drained and mashed

  • 2 tbsp truffle oil

  • 1/2 cup breadcrumbs (plus extra for coating)

  • 1 egg, beaten

  • 1 clove garlic, minced

  • 1/2 tsp dried thyme

  • 1/4 tsp black pepper

  • Salt to taste

  • 2 tbsp olive oil

Instructions:

  1. Prepare the mixture: In a bowl, combine mashed white beans, truffle oil, breadcrumbs, garlic, thyme, black pepper, and salt.

  2. Form croquettes: Shape the mixture into small patties or balls.

  3. Coat & chill: Dip each croquette in beaten egg, then roll in extra breadcrumbs. Chill in the fridge for 15 minutes to firm up.

  4. Pan-fry: Heat olive oil in a pan over medium heat. Fry croquettes for 3-4 minutes per side until golden brown.

  5. Serve: Enjoy with a dipping sauce or a fresh herb garnish.
