
White Bean & Truffle Croquettes
Mashed canned white beans, truffle oil, and breadcrumbs formed into crisp croquettes

1 can (15 oz) white beans, drained and mashed

2 tbsp truffle oil

1/2 cup breadcrumbs (plus extra for coating)

1 egg, beaten

1 clove garlic, minced
-
1/2 tsp dried thyme
-
1/4 tsp black pepper

Salt to taste

2 tbsp olive oil
Instructions:

Prepare the mixture: In a bowl, combine mashed white beans, truffle oil, breadcrumbs, garlic, thyme, black pepper, and salt.

Form croquettes: Shape the mixture into small patties or balls.

Coat & chill: Dip each croquette in beaten egg, then roll in extra breadcrumbs. Chill in the fridge for 15 minutes to firm up.

Pan-fry: Heat olive oil in a pan over medium heat. Fry croquettes for 3-4 minutes per side until golden brown.

Serve: Enjoy with a dipping sauce or a fresh herb garnish.
