
Smoked Artichoke & Sundried Tomato Quinoa
Quinoa infused with jarred smoked artichokes and sundried tomatoes.

1 cup quinoa, rinsed

1/2 cup jarred smoked artichokes, chopped

1/4 cup sundried tomatoes, chopped
-
2 tbsp olive oil
-
1 clove garlic, minced
-
1/2 tsp dried oregano
-
1/2 tsp smoked paprika
-
1/4 tsp red pepper flakes (optional)

1 3/4 cups vegetable broth

Salt & black pepper to taste

Fresh parsley or basil, for garnish
Instructions:

Toast the quinoa: In a dry pan over medium heat, toast the quinoa for 1-2 minutes until fragrant.

Sauté aromatics: Heat olive oil in a saucepan. Add garlic, oregano, smoked paprika, and red pepper flakes, cooking until fragrant.

Add quinoa & broth: Stir in quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.

Mix in artichokes & sundried tomatoes: Once the quinoa is tender, fold in smoked artichokes and sundried tomatoes.

Season & serve: Adjust salt and pepper to taste, garnish with fresh herbs, and enjoy!
