Smoked Artichoke & Sundried Tomato Quinoa 

Quinoa infused with jarred smoked artichokes and sundried tomatoes.

  • 1 cup quinoa, rinsed

  • 1/2 cup jarred smoked artichokes, chopped

  • 1/4 cup sundried tomatoes, chopped

  • 2 tbsp olive oil

  • 1 clove garlic, minced

  • 1/2 tsp dried oregano

  • 1/2 tsp smoked paprika

  • 1/4 tsp red pepper flakes (optional)

  • 1 3/4 cups vegetable broth

  • Salt & black pepper to taste

  • Fresh parsley or basil, for garnish

Instructions:

  • Toast the quinoa: In a dry pan over medium heat, toast the quinoa for 1-2 minutes until fragrant.

  • Sauté aromatics: Heat olive oil in a saucepan. Add garlic, oregano, smoked paprika, and red pepper flakes, cooking until fragrant.

  • Add quinoa & broth: Stir in quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.

  • Mix in artichokes & sundried tomatoes: Once the quinoa is tender, fold in smoked artichokes and sundried tomatoes.

  • Season & serve: Adjust salt and pepper to taste, garnish with fresh herbs, and enjoy!
